  • Roll and cut the dough: Roll out the dough on a lightly floured surface to about 1/8-inch thick. Cut into circles using a 4-inch cookie cutter or glass. 
  • Fry the shells: Heat oil in a deep fryer or large pot. Wrap each dough circle around a metal cannoli tube, sealing the edges with a dab of water. Fry until golden brown, then remove and drain on paper towels. 
  • Make the filling: In a bowl, combine ricotta cheese, powdered sugar, and vanilla. Stir in chocolate chips or candied fruit if desired. 
  • Fill the shells: Once the shells have cooled, use a pastry bag or spoon to fill them with the ricotta mixture.

Panna Cotta

Instructions

Prepare the gelatin
